Every bottle contains a single olive variety from a single estate, early-harvested and cold-extracted to preserve the full character of the fruit and the land it comes from.
We work directly with small, independent producers in Italy and Spain — relationships built on trust, fair pricing, and shared standards. No brokers, no bulk blending. The current range includes three varieties: Coratina from Puglia (organically certified, lab-tested at 847 mg/kg polyphenols), Nocellara from Sicily, and Picual from Andalusia.
