Information
After the curd is obtained from pasteurized sheep's milk and the addition of calf rennet and lactic acid bacteria, it is collected in special molds and dry-salted in special environments that allow secondary coagulation, achieving initial maturation.
The cheese is aged in wooden containers and treated with juniper berries and Modena balsamic vinegar to achieve the right maturation.
Sensory Characteristics
The rind color tends toward dark marc, the texture is grainy, slightly chalky, and very white, and the aroma and flavor are reminiscent of products treated with a rind.
