Young red wine D.O.Ca. Rioja Enantico
Information
Preparation: Traditional method of destemming and light crushing. The grapes are vatted in stainless steel tanks and macerated-fermented at a controlled temperature of between 28 and 30º C. Before completing the fermentation, they are devatted to maintain and preserve all their varietal character and avoid aggressiveness in the mouth (hard, green tannins). Malolactic fermentation is then carried out in stainless steel tanks at a temperature of 20º C, spontaneously. Once this is finished, it is racked and stabilized for bottling, using the least aggressive techniques with the wine to ensure its freshness.
Tasting notes: Cherry red color with a medium layer, with intense and frank aromas of red fruit and berries. In the mouth it is fresh, tasty and fruity.
Consumption temperature: Between 15º and 16ºC.
Pairing: Light meats, legumes, rice, medium-aged cheeses, vegetables... Variedad: Elaborado con las variedades de uva tempranillo, graciano y garnacha.
Elaboración: Método tradicional de despalillado y estrujado ligero. Las uvas se encuban en depósitos de acero inoxidable y macera-fermenta a una temperatura contralada de entre 28 y 30º C. Antes de finalizar la fermentación se descuba para mantener y conservar todo su carácter varietal y evitar agresividad en boca (taninos duros, verdes). Seguidamente se realiza la fermentación maloláctica en depósitos de acero inoxidable a una temperatura de 20º C, de manera espontánea. Terminada esta, se trasiega y se estabiliza para su embotellado, utilizando las técnicas menos agresivas con el vino para asegurar su frescura.
Notas de cata: Color rojo picota de capa media, con aromas intensos y francos de fruta roja y frutos del bosque. En boca es fresco, sabroso y frutal.
Temperatura de consumo: Entre 15º y 16ºC.
