Auf der norwegischen Atlantikinsel Gossa entsteht in einer kleinen Familienmanufaktur ein außergewöhnlich feines Meersalz. Michal Christina Øverland gewinnt dort nach alter Tradition aus dem klaren, kalten Wasser des Nordmeers hauchzarte Salzflocken – von Hand geerntet und naturbelassen.
Sie nennt ihr Salz Havsnø, norwegisch für „Schnee des Meeres“. Der Name passt zu den feinen, hellen Kristallen, die an Schneeflocken erinnern, leicht knuspern und anschließend auf der Zunge schmelzen.
Geschmacklich zeigt sich Havsnø klar und kräftig, dabei angenehm rund und ohne bitteren Beigeschmack. Seine feine Struktur macht es besonders als Finishing-Salz: kurz vor dem Servieren über das fertige Gericht gestreut, setzt es einen präzisen salzigen Akzent und bleibt zugleich in seiner besonderen Textur spürbar.
