Description Thyme, or “thymus” as it is known in Latin, is part of the Lamiaceae family along with Lavender, Mint and Oregano. Thyme is a perennial shrub that reaches up to 30 cm in height. Thymes take the form of creeping plants, or "cushions". There are a multitude of Thyme species, nearly 300 with very different properties. The most used species, common thyme (Thymus vulgaris) can give different essential oils depending on the conditions of its development, in particular sunshine and altitude. There are thus 6 different chemotypes. The essential oil of common thyme with linalool is one of them: it is an oil produced from a thyme which has grown at altitude (from 400 to 1300 m generally) and which has been able to benefit abundantly from the sun, on the slopes mountains around the Mediterranean. It owes its fragrance and its milder flavor to its richness in linalool. The Egyptians appreciated it to embalm their dead, the Greeks burned it as an offering to the gods, while the Romans used it in their cosmetics and used it to purify their habitat and flavor their culinary preparations. Thyme linalool essential oil is the sweetest thyme essential oil. Le thym est un arbrisseau vivace qui atteint jusqu’à 30 cm de hauteur. Les Thyms prennent la forme de plantes rampantes, ou de « coussinet ». L’espèce la plus utilisée, le Thym vulgaire (Thymus vulgaris) peut donner différentes huiles essentielles en fonction des conditions de son développement, en particulier l’ensoleillement et l’altitude. L’huile essentielle de thym vulgaire à linalol en fait partie : c’est une huile produite à partir d’un thym qui a poussé en altitude (de 400 à 1300 m généralement) et qui a pu profiter abondamment du soleil, sur les versants montagneux du pourtour méditerranéen. Elle doit son parfum et sa saveur plus douce à sa richesse en linalol.
