The wind, the sun or, more recently, the electric oven do the trick. After a few tests, we know that the electric oven, at low temperature, with a high thermal inertia, gives the best results. It removes water without altering the taste and nutritional properties of the dried product. Drying allows a food to retain its potential, avoiding: the inevitable oxidation of its cells, the alteration of its taste, smell and colour, and the destruction of the nutrients it contains during transport and storage.
