The word Adobo is derived from the Spanish word adobar, which means marinade. The Spanish settlers gave the name "Adobo" to the native cooking method of the Philippines because their marinades were so similar. Today, the Spanish Adobo generally refers to the sauce, a sauce with an intense and red taste, due to the paprika, containing chipotle peppers cooked in the marinade base mixture.
